Vegetarian Miso Ramen
This miso ramen is delicious and easy to make. Add whatever toppings you enjoy. Mushrooms, tofu, and corn are classics, add a soft boiled egg if you like.
I recommend cooking any toppings that you chose first and set aside. Then cook noodles and cool under cold water and set aside. Prepare soup base paste and set aside. Then prepare broth liquid. Then assemble.
Soup Base
- vegetable broth - 1L
- milk (cow or vegan) - 500ml
- miso paste - 1/2 cup
- sugar - 1 tablespoon
- sesame oil - 1 tablespoon
- soy sauce - 1/4 cup
- rice vinegar - 2 tablespoons
- chili flakes - pinch
The soup base is two parts. The miso paste combined with: sugar sesame oil, soy sauce, chili flakes and rice vinegar. The other part is vegitable broth mixed with milk.

- mushrooms
- tofu
- egg
- toasted sesames
- chili flakes
Assembly
Add scoop of soup base paste to bowl. Top with noodles and then toppings. Pour over with broth and milk mixture. Top again with sesames and chili flakes.
