Pan Pizza

Use a food scale and be happy.

Dough Ingredients:

  • 400g of flour
  • 275 grams(ml) water
  • 10 grams salt
  • 8 grams olive oil
  • 4 grams yeast

Dough Directions:

Weight and measure out ingredients above. Combine in a large bowl and mix with a spatula. When almost all the water has been absorbed use your hands to mix in the remaining flour stuck to the sides of the bowl.

Cover bowl with dough with plastic wrap or towel for 8-12 hours.

Remove dough from bowl and place on lightly floured surface. Dough will stick to the bowl but do not worry. Use a bench scraper or knife to divide the dough in half. Form the two halves into balls using any technique you are familiar with.

Place dough balls on two olive oil greased cast iron skillets. Cover dough with olive oil as well. Cover and let rest for 2 more hours.

Press down on dough balls in skillet with your fingers removing air bubbles and spreading out the dough to cover the bottom of the pan.

Place topping on pizza and BAKE. Bake on as high a heat as you can. At 500°F it can take around 20 mins. Remove when top of crust and toppings look good. You can still cook the pizzas in the pans on the stove if the bottom crust isn't quite done enough.
